Beef Tagine with Belazu Tagine Paste
A classic Moroccan-style tagine, slow-cooked until the beef falls apart. Belazu's smokey Tagine Paste and a preserved lemon do most of the work, balanced by cinnamon, apricots and almonds. Needs time, not effort.
Method
- Mix the beef chunks with the tagine paste and set aside to marinate for at least an hour, or overnight if you have time.
- Heat the oil in a frying pan and fry the onions over medium heat until golden. Add the garlic and fry for a further 2 minutes. Remove the onions and garlic, then fry the beef in the same pan until browned all over.
- Turn the heat to its lowest setting. In a casserole dish with a tight-fitting lid, put the onions and garlic in the bottom and sit the beef on top. Add the saffron with its soaking water, the beef stock and the cinnamon stick. Bring to the boil, then reduce to a very gentle simmer for 1½ hours.
- Stir in the chopped preserved lemon skin and apricots, making sure they're covered by the liquid. Simmer for a further 30 minutes.
- Taste and season. Serve over couscous, scattered with coriander and flaked almonds or pistachios.
