The story.

This is a candied honey popcorn rather than a light one. Popped corn is 19 per cent of the bag. The rest is a butter and raw sugar caramel carrying 9 per cent Australian honey, so every piece is coated and faintly sticky, closer to a honey praline than to a bowl of salted popcorn. An 80g bag from The Regimental Condiment Company.

It is the only popcorn in a range that is otherwise relishes, chutneys, mustards and conserves, and it keeps the same naming habit: B Company sits alongside the Fighting Furys tomato relish and Spitfire hot English mustard. At 80g it is a bag for a drinks table or a hamper gap rather than a share bag for a film.

What does honey popcorn taste like?

Butter and caramel first, honey second. Raw sugar and glucose syrup lead the ingredient list, so the honey sits behind the caramel and rounds it off rather than announcing itself, and the salt in the butter stops the finish going flat. The coating sets hard, so it eats with a snap instead of the airy squeak of freshly popped corn.

What is in it?

Raw sugar, glucose syrup, popped corn (19 per cent), Australian honey (9 per cent), butter (milk) (cream, water, salt), sunflower oil, soy lecithin and salt. It contains milk and soy, so it is neither dairy free nor vegan.

How is it different to Kangaroo Island honey popcorn?

Same idea, different honey. Kangaroo Island Honey Popcorn is coated in Ligurian bee honey from the island's own hives; this one uses Australian honey in a butter caramel. Both are 80g bags. The rest of the range, including the native flavours from Uncle Charlie's, sits on gourmet popcorn.

What do you serve it with?

It goes into hampers more often than into bowls, because 80g fills a gap without adding weight and it is the sweet counterweight to a savoury box. On a drinks table it belongs next to salted nuts and something sharp: it is the one sweet thing people will eat standing up, one handful at a time.

Cook with it.
