The story.
Tapenade is a Provencal paste of crushed olives, capers and oil, used as a dip, a spread or a seasoning rather than as a sauce. This jar is 72 per cent naturally ripened Beldi black olives, crushed with capers, sun-dried tomatoes and a little garlic. There are no anchovies in it, which is the one place it parts company with the classic Provencal recipe.

What is tapenade made of?
Classically, black olives, capers, olive oil and often anchovies, pounded rather than blended so it stays coarse. This jar reads, in order: black olives 72 per cent, sunflower oil, sun-dried tomatoes 5 per cent, capers 3 per cent, salt, garlic puree, cumin and citric acid. The cumin is the unusual one and it is why this tastes rounder than a straight olive and caper paste.
Is tapenade vegetarian or vegan?
Most jarred tapenade contains anchovies. This one does not, and nothing else in the ingredient list above is animal derived, so it works in vegetarian and vegan cooking. How do you use black olive tapenade?
