The story.

These are Nutworks macadamias still in the shell, dry roasted and salted, 200g in a stand-up pouch. In shell means you crack them at the table, which is the whole point: it slows the eating down and it is why a bowl of these lasts an evening where a bowl of kernels lasts ten minutes. The list is short, 98 per cent macadamia with sea salt and a little macadamia oil.

Macadamias are an Australian native and Nutworks grows, processes and packs on the Sunshine Coast. A tree takes about five years before its nuts are worth harvesting, and the growers keep native bee hives on the farms to help with pollination. The nuts are gathered after they fall, husked on farm and sent in for roasting.

How do you crack macadamia nuts in the shell?

Not with your teeth. A macadamia shell is one of the hardest in the nut world and the seam is the only sensible line of attack. What is in them, and what should I know about allergens?

Macadamia 98 per cent, sea salt and macadamia oil. The pack declares macadamia and carries a broad may-contain covering peanuts, milk, sulphites, soybean products, wheat, sesame, egg, fish, crustacea and tree nuts, so they are not suitable if you are managing a serious nut or peanut allergy.

What else can you do with macadamias?

More than put them in a bowl, which is the argument in macadamias do more than sit in a bowl. The one to start with is macadamia dukkah from a packet of roasted nuts, and they earn their place on a Christmas drinks board too. Store the pouch cool, dry and out of the sun, and airtight once it is open.
