The story.

Harissa is a North African chilli paste: rehydrated red chillies and paprika blended with garlic, salt, spices and oil. Rose harissa is the same base with dried rose petals added, which lifts the aroma and rounds the heat off rather than making it hotter. This is the 130g Belazu jar, the one most British restaurant kitchens mean when they say rose harissa.

Belazu’s Rose Harissa Paste is an iconic condiment known for its distinctive blend of aromatic spices and dried rose petals, resulting in a paste with complex layers and a slow-burning, balanced heat. Revered in the UK for over 20 years, this award-winning harissa has become a culinary staple for both professional chefs and home cooks, adding depth and warmth to countless dishes. As a paste inspired by North African flavours, the rose harissa is incredibly versatile, with a robust flavour profile that enriches meats, vegetables, sauces, and marinades.

This rose harissa paste begins with a base of rehydrated paprika and red chilli peppers, combined with quality rapeseed and sunflower oils to create a smooth, luxurious consistency. What truly sets Belazu’s Rose Harissa Paste apart is the addition of dried rose petals, which introduces a floral sweetness that perfectly balances the spices. These rose petals are enhanced by a touch of rose flavouring, creating a fragrant quality that adds a new dimension to traditional harissa. With every spoonful, this harissa brings a fusion of paprika, garlic, chilli, and spices, offering a slow-release warmth that makes it adaptable to almost any dish.

Rose harissa is not only for tagines. Stir a spoonful through yoghurt or mayonnaise for a quick dip, toss it with cauliflower, carrots or sweet potato before roasting, or work it into the spice mix when you marinate lamb, beef or chicken. It carries a stew as easily as it carries a tray of vegetables. For a marinade, loosen it with lemon juice and a good oil such as Early Harvest Extra Virgin Olive Oil. The Ottolenghi range draws on the same Middle Eastern larder if you want to keep going.

What is harissa sauce?

A chilli paste rather than a sauce, from the Maghreb. The constant is chilli and paprika loosened with oil; everything after that is regional. It is used as a cooking base, a marinade and a condiment, and it is thick enough to spoon rather than pour. There is a fuller explanation of the styles in what harissa paste is, and how the styles differ.

What is the difference between harissa and rose harissa?

Rose petals. A plain harissa is chilli, paprika, garlic and spice. Rose harissa adds dried rose petals and rose flavouring, which reads as floral and slightly sweet on top of the chilli and makes the heat feel slower. Use plain harissa when you want the chilli to lead, and rose harissa when it is going into something with lamb, tomato, yoghurt or honey. Our other jar, Belazu smoked chilli harissa, leads with smoke instead of rose.

What is in Belazu rose harissa?

Rehydrated paprika and red chilli peppers, rapeseed oil, sunflower oil, garlic, salt, chilli, mixed dried spices, rose petals, rose flavouring, lemon juice, paprika extract for colour and citric acid. The allergen statement we hold reads contact us for more details, so call 1300 936 406 if you need a written declaration.

How hot is rose harissa?

Warm rather than fierce. The heat builds slowly and sits behind the paprika and the rose instead of hitting first, which is why a tablespoon disappears into a tray of vegetables without anyone reaching for water. Start with a teaspoon per person and go from there.

What can I cook with rose harissa?

Three we have written up: harissa chicken traybake, lamb meatballs with rose harissa and tahini sauce and olive and harissa pasta with tuna. If you would rather browse, ten ways to use Belazu rose harissa runs from breakfast eggs to a roast. The rest of the range is on the Belazu brand page.
